Pączki

  • Beignet - Beignet, synonymous with the English "fritter", is the French term for a pastry made from deep-fried choux pastry. Beignets may also be made from other types of dough, including yeast dough.
  • Carnival - Carnival is a Western Christian festive season that occurs before the liturgical season of Lent. The main events typically occur during February or early March, during the period historically known as Shrovetide.

    Custard and Raspberry Jam Pączki 🇵🇱

    Pączki
    2 cups warm whole milk
    1 packet dry yeast (70g or 2 ¼ t)
    5 egg yolks and 1 whole egg
    ½ cup sugar
    ¼ cup European butter, melted
    ½ t vanilla extract
    1 t salt
    6 cups flour
    Canola oil for frying

    Crème Pâtissière
    1-liter whole milk
    1 T vanilla extract
    200g sugar
    110g corn starch
    4 eggs

    Raspberry Jam
    4 cups raspberries (32oz-36oz)
    ¾ cup water
    ¾ cup sugar
    3 T corn starch
    3 T water

    Pączki
    1. Heat the milk to 110 degrees (1 minute in the microwave).
    2. In a large bowl mix warm milk and yeast. Stir in 2 cups of flour. Let stand for ½ hour, in a warm spot, until bubbly.
    3. Beat the egg yolks and egg, set aside.
    4. Stir in butter, sugar, salt, and vanilla into the yeast mixture. Then stir in the egg mixture.
    5. Add the rest of the flour and knead slowly until a soft dough forms, about 2 minutes.
    6. Cover the bowl, and let rise until doubled in size, about 2 hours.
    7. Punch the dough down, turn out onto a floured surface, and roll out until just less than ½ inch thick.
    8. Use a 3” cutter to cut out circles, place them on a silicone pad or parchment paper, cover with a towel, and let rise for 20-30 minutes.
    9. In a large pot, heat oil to 350 degrees.
    10. Gently drop 4 pączki at a time into the pot, and fry until golden brown, then flip and fry on the other side.
    11. Set the paczki on paper towels to drain.
    12. Fill/stuff/powder to your heart’s content.

    Crème Pâtissière
    1. Bring the milk, vanilla extract, and a little bit of the sugar to a gentle simmer in a large pot.
    2. In a medium bowl, sift the sugar and corn starch, then add the eggs. Whisk until smooth.
    3. Pour half of the milk mixture into the bowl, whisk.
    4. Pour the contents of the bowl into the pot with the remaining milk, whisking constantly. It should thicken considerably at this stage.
    5. Bring to a gentle boil, and whisk for 3 minutes.
    6. Cool and use as needed.

    Raspberry Jam
    1. In a medium pot bring the raspberries, water, and sugar to a gentle boil, and cook, whisking often, until the fruit has completely broken apart.
    2. In a small bowl, dissolve the corn starch with the water.
    3. Strain the raspberry mixture through a fine sieve to remove all the seeds. Pour back in the pot.
    4. Add the corn starch mixture, and whisk until thickened.
    5. Cool and use as needed.

    Fat Tuesday Paczki's

    February 28th is Fat Tuesday(aka Paczki Day) for 2017. It marks the day before Ash Wednesday which is the first day of Lent for Christians everywhere. Traditionally, Fat Tuesday got it's name from people wanting to clear out the food from their kitchens before Lent and/or the springtime season. Paczki's were one of the fallout's from that kitchen clearing. Religious or not, Christian or not, the greatness of the paczki cannot be denied.

    I don't know about anyone else who grew up with these things, but they are what I was thinking about during school on Fat Tuesday(or Paczki Day) every year.

    And still, not a single person has been able to stop my train of thought. The only difference now is that I have no younger brothers(never had any sisters to deal with, thankfully) to share with... now I have all the paczki... for me... they are all mine... ALL MINE!!! MUAHAHAHAHAHAHAHAHAHA!!!
