    Forde Abbey, Chard, Somerset

    Beautiful Forde Abbey near Chard in Somerset. We drove to see this from West Bay in Dorset and out GPS took us through miles of little tiny one lane roads. It began to rain, so Peter gave up and decided to just drive to Chard to have lunch along the bigger roads. As we were coming into Chard, we spotted a sign to Forde Abbey which was only a few minutes away with only a couple of hundred of metres of narrow roads. Sometimes you just can't trust a GPS to take you the best way.

    When we finally arrived, the sun came out and we had a lovely walk around the house and gardens.

    Forde Abbey is a privately owned former Cistercian monastery in Dorset, England, with a postal address in Chard, Somerset. The house and gardens are run as a tourist attraction while the 1,600-acre estate is farmed to provide additional revenue.

    Swiss Chard Soup

    Why would anyone grow Swiss chard with thick white crisp stalks if these stalks were not delicious? Cooked, they taste light and tender, almost like white asparagus. You could add sautéed chard leaves to the soup, but I decided to mix things up a bit and added fresh peppery arugula. You can make red or yellow versions of this soup using rainbow chard stalks and adding red or yellow beets as colouring agents.

    Swiss Chard Soup w/ Arugula
    Ingredients: (pasta cooking) water, garlic, leek (white part only), scallions (white part only), white Swiss chard stalks, white lentil flour (or a potato), arugula, lemon juice, nutmeg, white pepper, olive oil

    Sautee leek and scallion whites in olive oil. Add chopped Swiss chard stalks and cover throughout with olive oil. Add boiling water barely covering the vegetables (or use reheated pasta cooking water). Stir in white lentil flour and cook until the stalks are tender. Take off the heat, let cool, and puree with a hand-held blender. Season to taste with salt, white pepper, and lemon juice. Stir in 2/3 of arugula, setting 1/3 aside as garnish. Grate nutmeg on top, and serve garnished with arugula. Enjoy!

    Yellow Bean Salad
    Ingredients: yellow beans, white wine vinegar, sugar, red onions, sumac, parsley, olive oil

    Clean the beans and cut into 2 inch pieces. Cook for ten minutes in boiling salted water. Drain, saving the liquid. In a jar that is big enough to hold the beans, mix vinegar with some sugar for the marinate, add the beans, and fill up with the cooking liquid. Let sit for a couple of hours. Dress beans with some olive oil and combine with pickled red onions with sumac and parsley. I've posted a recipe here some time ago: www.flickr.com/photos/caprilemon/33891607572/

    Bitter Lemon Water
    This is flavoured water using the bitter white parts of lemon peel. After you have used the zest and the juice for something else and have the white peel left, add it to a bottle of water and put it in the fridge. A couple of hours later you'll have bitter lemon water.
